As all fuchsia flowers are edible, here's a simple salad made just from fuchsia flowers with a simple dressing. Note that the sepals, tube, and ovary can be bitter so it's best to remove them after you've picked the flowers.
Ingredients:
4 generous handfuls of fuchsia flowers (pick several different types for a prettier effect)
1 tbsp lemon or lime juice
1 tsp extra-virgin olive oil
a few slivers of pecorino cheese (optional)
Method:
Pick the flowers fresh then remove the sepals, tube and ovary to eliminate any bitterness. Mix the flowers well then arrange them on a serving dish.
Whisk together the citrus juice and olive oil in a mug then drizzle over the flowers. If desired, garnish with a few slivers of pecorino cheese (optional). Serve as a pretty starter or as an accompaniment.
