Here is a recipe for a large version of a mince pie that makes an excellent dessert or a tea-time treat over the Christmas period.
Frosted Family Mince Pie: A British recipe for a large family mince pie in a sweet pastry base and puff pastry lid served with an egg glaze and sugar frosting.
Ingredients:
200g frozen puff pastry, thawed
For the Sweet Pastry:
115g plain flour
pinch of salt
15g caster sugar
50g butter, finely diced
1 egg yolk
450g mincemeat (eg this site's
citrusy mincemeat), to fill
1 egg white, lightly beaten with a little caster sugar, to glaze
Method:
Begin by preparing the pastry. Sift together the flour and salt into a bowl. Form a well in the centre and ad the sugar, butter and the egg yolk. Blend these ingredients together, drawing in the flour with your fingertips, until everything is combined to a firm dough.
Form into a ball, wrap in clingfilm (plastic wrap) and chill for 30 minutes.
After this time, turn the pastry out onto a lightly-floured work surface and roll out to 2.5mm thick. Use to line the base and sides of a 20cm diameter fluted flan ring set on a baking tray.
Fill with mincemeat, then roll the puff pastry out thinly. Dampen the edges and use to cover the pie. Press the edges of the pastries to seal then trim off any excess. Cut the pastry trimmings into decorative shapes and use to decorate the pie.
Transfer to an oven pre-heated to 220°C and bake for 20 minutes. After this time, reduce the oven temperature to 200°C and continue baking for 10 minutes.
Remove the pie from the oven and brush the top with beaten egg white. Sprinkle over some sugar then return to the oven and bake for 10 minutes more.
Remove the flan ring and serve either hot or cold, sliced into wedges.
