White ants are really termites. These can be a real pest, and in Malawi, when they swarm they are collected, boiled or fried and served as a snack. They can be found in many markets and the image here shows prepared termites ready for salt in Malawi. If is typically compared to popcorn in terms of taste and texture.
This is usually served as an ndiwo, but can be eaten as a snack.
Ingredients:
100g white ants (large, winged, termites)
120ml water
2 tbsp margarine
salt, to taste
Method:
Prepare the ants by removing heir wings and by wiping away any dust and foreign matter.
Add the water to a pan, salt it and bring to a boil. Add the prepared white ants, return to a boil and cook for about 15 minutes, or until the water has evaporated away.
Reduce the heat and stir in the margarine then cover the pan and steam for 3 minutes.
Season to taste with salt, take off the heat and serve immediately.
