Fried Potatoes with Rosemary and Garlic: An Irish recipe for an accompaniment of potatoes fried in oil that are finished with garlic and rosemary.

Ingredients:

900g potatoes, scrubbed but not peeled and cut into 1/25cm cubes
6 tbsp olive oil
8 plump garlic cloves (unpeeled)
leaves from 1 sprig of fresh rosemary, chopped
salt and freshly-ground black pepper, to taste

Method:

Heat the oil in a large, heavy-based frying pan. Add the potatoes, spreading them over the base of the pan to form a single layer. Cook over moderate heat, stirring and turning, until they are an even, light, golden brown.

Scatter over the garlic cloves, cover the pan and cook gently for 15 minutes, shaking the pan and stirring the potatoes occasionally, until the potatoes are tender inside and crisp and golden outside.

Just before the end of cooking, add the rosemary and seasonings. Serve immediately.
