It's little known, but the very young flower buds of dandelions are quite edible. In fact, when fried in butter they taste rather like mushrooms. Here this is used to good effect in a simple stir-fry.
Ingredients:
15 dandelion flower buds, rinsed in water
70g plain flour
2 tbsp butter
salt and freshly-ground black pepper, to taste
Method:
Melt the butter in a pan and when foaming dredge the dandelion flower buds in the seasoned plain flour.
Add the flowers to the pan and fry quickly, turning them to ensure they're browned all over. Serve hot with a dipping sauce.
