Ingredients:
120g fresh white breadcrumbs
30g butter
Method:
This may not seem like much of a recipe, but it is a traditional accompaniment for a number of game birds. Of course, making fried breadcrumbs is simplicity itself. Add the butter to a frying pan and heat until bubbling. Add the breadcrumbs and fry, stirring frequently, until golden brown. Turn onto a pate and serve.
To make the dish more interesting you can add finely-chopped tarragon (great with any fowl) or a few pinches of crushed, dried, chillies (my wife likes this).
