Fried Cassava

Ingredients:

4 medium cassavas
salt to season
1l of water
500ml cooking oil

Method:

Peel and wash the cassavas cut into large rounds, place in lightly salted water and boil until done (about 20 minutes). Drain and allow to cool. Cut into slender pieces some 6cm long and 1.5cm wide.

Heat the oil in a wok and when hot deep fry the cassava until golden on all sides. Drain on kitchen paper and sprinkle with salt. Serve just like chips (French fries).
