Fricassée de Brèdes (Fricassee of Amaranth Greens) is a traditional Reunionaise (from Reunion) recipe for a classic accompaniment of amaranth greens, onion, ginger and chillies cooked in an oil base flavoured with thyme. Ingredients:

3 packets (750g) amaranth leaves (or substitute baby spinach)
1 onion, peeled and sliced
3cm piece of ginger, grated
5 garlic cloves, crushed
salt
3 piri-piri chillies
2 tbsp thyme leaves, chopped
3 tbsp oil

Method:

Remove the tough stems from the amaranth greens (or spinach) then split each leaf in half lengthways. Split each leaf half in half again lengthways.

Heat the oil in a small pan then add the onion, ginger and garlic. Fry for 1 minute then add the amaranth leaves, chillies and thyme. Continue frying for about 10 minutes, stirring occasionally, until the greens have wilted an the vegetables are cooked.

Serve hot as an accompaniment.
