Fricassée de Brède Chouchou (Fricassee of Pumpkin Leaves)

Fricassée de Brède Chouchou (Fricassee of Pumpkin Leaves) is a traditional Reunionaise (from Reunion) recipe for a classic accompaniment of pumpkin (typically chayote) leaves, onion, ginger and chillies cooked in an oil base flavoured with thyme. Chouchou refers to the Chayote an edible plant belonging to the gourd family, Cucurbitaceae. It's the leaves that are used in this recipe, but any edible pumpkin leaves could be substituted.

Ingredients:

3 packets (750g) pumpkin leaves (or substitute baby spinach)
1 onion, peeled and sliced
3cm piece of ginger, grated
5 garlic cloves, crushed
salt
3 piri-piri chillies
2 tbsp thyme leaves, chopped
3 tbsp oil

Method:

Trim the stems from the leaves, then cut the leaves into strips lengthways. Combine the leaves and stems for cooking.

Heat the oil in a small pan then add the onion, ginger and garlic. Fry for 1 minute then add the amaranth leaves, chillies and thyme. Continue frying for about 10 minutes, stirring occasionally, until the greens have wilted an the vegetables are cooked.

Serve hot as an accompaniment.
