French Bread Pizza

If you want an easy to make pizza then halved French Bread or Ciabatta make excellent ready-made pizza bases.

Ingredients:

2 baguettes
1 batch Tomato Sauce for Pizza
4 plum tomatoes, thinly sliced lengthways
150g Mozzarella cheese, thinly sliced
10 pitted black olives, cut into rings
8 fresh basil leaves, shredded
olive oil for drizzling
salt and freshly-ground black pepper, to taste

Method:

Heat a griddle pan until quite hot then halve the bread lengthways. Place the bread crust side down on the griddle pan and cook until nicely marked and toasted (do not toast the other side).

Remove the bread from the pan then spread the cut side with the tomato sauce. Arrange the tomato and Mozzarella slices alternately over the top of the bread then top with the olive rings and half the shredded basil. Drizzle the olive oil over the top and season well.

Place the finished baguette under a pre-heated grill and cook until the cheese melts (or place in an oven pre-heated to 200°C and bake for about 15 minutes, or until the cheese is nicely melted.

Sprinkle the remaining shredded basil over the top and serve.
