Forgotten Pudding

Ingredients:

100g sugar
8 egg whites
1/8 tsp cream of tartar
6 tsp caster sugar

Method:

You will need a mould or heat-proof bowl that's been greased to hand. Add the sugar to a pan and heat gently until melted. Continue cooking, stirring constantly, until the sugar has caramelized to a golden brown then take off the heat and pour into the base of your bowl or mould.

Meanwhile, pre-heat your oven to 180°C. Add the egg whites and cream of tartar to a clean and dry bowl. Beat until stiff and dry then fold-in the caster sugar until dissolved. Beat the mixture again then turn into your mould so the meringue sits on top of the caramelized sugar.

Place the pudding bowl in a roasting pan half-filled with hot water. Transfer to the oven and immediately turn the oven off. Leave the meringue to set for 2 hours and serve with hot custard.
