c (Fondant Icing)

Fondant Icing is a traditional British recipe for a classic hard icing (frosting) made from a sugar syrup base that is typically used for decorating cakes, particularly wedding and Christmas cakes. Ingredients:

500g granulated sugar
210ml water
generous pinch of cream of tartar

Method:

Combine the sugar and water in a heavy-based saucepan (this needs to be scrupulously clean). Place over low heat and allow the sugar to dissolve gently. Once the sugar has dissolved stir the cream of tartar into 1 tbsp water then work into the sugar syrup.

Cover the pan and bring to a boil. Continue boiling the syrup rapidly until it reaches 115°C, as measured by a confectioner's thermometer. Whilst you cook, brush the sides of the pan down every now and then to return any sugar crystals to the liquid.

Once the syrup has reached the appropriate temperature take the pan off the heat and stop any further cooking by dipping the base of the pan in a sink of cold water. Now pour the syrup in a steady stream onto a chilled and wetted marble or slate slab. Sprinkle the surface of the syrup with water and allow to cool naturally for a few minutes.

Using a sugar scraper, draw the edges of the syrup together towards the middle and start to work the fondant with a wooden spatula held in one hand and the scraper held in the other. Continue working, without stopping, drawing in all the syrup all the while, until the fondant 'turns' (this is when it becomes white and opaque). At this point cut the fondant into small pieces and knead each piece thoroughly before transferring into a bowl. Cover the bowl with a piece of damp cloth and set aside to mellow for at least 2 hours before use. You can also store in a screw-topped jar for later use. To use, roll the fondant out and use to cover the sides and top of your cake. You can also use to sculpt decorations for your cake.
