Snapdragon flowers are edible though slightly bitter. However, due to the bitterness, they work as a substitute for endive when mixed with other greens.
Wash and dry the salad greens, violet leaves and rocket leaves. Mix together then arrange on four serving plates.
Divide the cherry tomatoes and snapdragon flowers between the plates then divide the edible flowers into four portions and scatter one of these over each plate. Serve.
