Flapjacks: Classic British recipe for the traditional soft and moist oaten biscuit made with a blend of oats, butter, sugar and syrup cut into fingers.

Ingredients:

270g butter
270g brown sugar
140ml golden syrup (corn syrup)
550g rolled oats

Method:

Melt the butter and add the golden syrup and brown sugar. Keep on a low heat until all the sugar dissolves, but do not allow to boil.

Remove from the heat and add the oats. Mix well then place the mixture on a baking tray of some 30cm x 20cm and roll the mixture to 3cm thick. Bake in an oven pre-heated to 180°C (350°F/Gas Mark 4) for about 15–20 minutes until golden brown all over,

Allow to cool and then cut into squares. Store in an air-tight container. If you want a little extra flavour to these flapjacks, then mix in the finely-grated zest of 1 orange with the oats.
