This is a classic fish kebab from Amritsar with fish marinated in yoghurt with a blend of spices.
Ingredients:
500g (1 lb) fish fillets, cubed
1 tbsp lemon juice
1 tbsp minced ginger (ginger paste)
1 tbsp minced garlic (garlic paste)
pinch of ground turmeric (turmeric powder)
1 tsp ground cumin (cumin powder)
1/2 tsp ground coriander (coriander powder)
1/2 tsp garam masala
1-2 tsp red chilli powder
1/4 tsp ground black pepper (black pepper powder)
60ml (1/4 cup) yogurt
Salt to taste
6 bamboo skewers, soaked in water for 20 minutes
Lemon wedges, to serve
Method:
Place fish and lemon juice in a bowl. Season with salt. Set aside for 10 minutes.
Combine the ginger, garlic, ground cumin, ground turmeric, ground coriander, ground black pepper, red chilli powder and yogurt in the bowl of a food processor. Season with salt. Process to a smooth paste. Add a little water if required.
Add this mixture to fish. Mix well until the fish pieces are evenly coated. Set aside to marinate for 15 minutes in the refrigerator.
Thread the fish pieces onto the skewers. Leave a 2cm (1 in) gap on the top of the skewers. Grill the skewers, preferably over charcoal, for 5-7 minutes, flipping halfway through.
