Fish Slice: A Classic British recipe for a baked dish of flaked fish in a white sauce based coating that's baked in a puff pastry crust and sliced before serving.

Ingredients:

225g puff pastry (ie made with 225g flour)
200ml coating consistency white sauce
1 tbsp parsley, chopped
1 egg, beaten (for egg wash)
500g fish, cooked and flaked (cod, salmon and haddock are all good [or a blend]) — allow to cool after flaking

Method:

Prepare the puff pastry according to the recipe.

Stir the cooled fish pieces into the white sauce with the parsley.

Turn just over 1/3 of the the pastry onto a lightly-floured work surface and roll out into a rectangle about 20 x 30cm. Transfer this onto a lightly-greased baking tray. Sit the filling on the pastry, spreading it to within 2cm of the edge.

Roll out the remaining pastry and to a similar thickness to the first piece (about 35 x 25cm in size) then dampen the edges of the pastry on the baking tray and sit the second piece of pastry on top. Press the edges firmly together to seal and trim the edges neatly.

Brush the surface of the pastry with egg wash then, using a sharp knife, slash the top along the surface to make steam holes.

Transfer to an oven pre-heated to 210°C and bake for about 25 minutes, or until golden brown and cooked through.

Allow to cool slightly then slice and serve.
