Fish Serre

Ingredients:

2 large saltwater fish
1/2 tsp salt
1/2 tsp freshly-ground black pepper
generous pinch of dried thyme
400ml coconut milk
1 each of green, red and yellow bell peppers, diced
1 dessert spoon brandy
1 onion, diced
2 green bananas, peeled and sliced

Method:

Wash the fish and cut into serving-sized steaks. Add the coconut milk to a large saucepan and bring to the boil, stirring occasionally.

Grease the base of a baking dish. Lay the fish in this then scatter the peppers onion and bananas over the top. Season to taste and add the thyme and brandy. Pour the coconut milk over the top, cover with a sheet of foil then place in an oven pre-heated to 200°C. Bake for about 35 minutes, or until the fish has cooked through. Serve on a bed of rice.
