Despite the name, this is actually a recipe for a Danish biscuit (cookie). Many Danish flours have ascorbic acid (vitamin C) added to them. To attain the same flavour profile, if you are outside Denmark, you need to add a little ascorbic acid to your dough.
1 egg, beaten, to garnish
crushed nuts, to garnish
sugar or cinnamon sugar, to garnish
Method:
Combine all the ingredients in a food processor and pulse until it comes together as a dough. Form into a ball then roll out into a rope about 1cm thick, cover in clingfilm (plastic wrap) and refrigerate for at least 60 minutes to make it firm.
After this time, unwrap the rope then cut into slices about 5cm long. Arrange on a baking tray lined with greaseproof paper and brush with the beaten egg, sprinkle over some of the crushed nuts and a little sugar. Transfer to an oven pre-heated to 180°C and bake for about 8 minutes, or until golden brown and cooked through.
