Ingredients:
1 rabbit, jointed
1 tbsp cooking oil
3 cloves garlic, finely chopped
1 tbsp dried thyme
300ml (about) dry white wine
salt and freshly-ground black pepper, to taste
2 garlic cloves, crushed
Method:
Combine the rabbit pieces and the 3 sliced garlic in a large bowl. Pour over just enough white wine to cover then add the thyme and season to taste. Cover the bowl and refrigerate over night to marinate.
When ready to cook, heat the oil in a pan, add the garlic and fry for a few minutes, or until aromatic. Remove the rabbit pieces from the marinade, wipe dry then add to the hot oil and fry, turning occasionally, until thoroughly cooked. Sprinkle a little white wine over the rabbit pieces from time to time, to prevent burning.
If desired, you can season with salt, black pepper and thyme. Serve with chips (french fries) and a green salad.
