Ezay (Bhutanese Chilli Condiment) is a traditional Bhutanese recipe for a classic condiment of chilles blended with tomatoes, onion and coriander in a cheese and olive oil base. Ingredients
100g chopped tomatoes, seeds removed
50g chopped red onions
50g dried red chillies*, fried in oil, drained well on kitchen towels, chopped finely
50g chopped coriander
50g feta cheese or cottage cheese crumbed finely
15g extra-virgin olive oil or any vegetable oil
5g salt
1g or a sprinkling of Sichuan peppercorns, ground
Method:
Combine all the ingredients in a bowl then pack into a jar and store in the refrigerator.
