Eve's Pudding

Eve's Pudding is a traditional English recipe for classic pudding of cooking apples and sultanas topped with a flour, egg and milk batter that's finished with almonds and oven baked until set and served with custard. This is very much a classic English pudding, its name originating from the apples that are the foundation of the dish.

Ingredients:

450g cooking apples, peeled, cored and sliced
75g granulated sugar
1 tbsp lemon juice
50g sultanas
75g butter
75g caster sugar
1 egg, beaten
150g self-raising flour
25g ground almonds (optional)
3 tbsp milk
25g slivered almonds

Method:

Mix the apples in a bowl with the granulated sugar, lemon juice and sultanas. Spoon the mixture into a well-greased 850ml oven-proof dish.

Meanwhile cream together the butter and caster sugar in a bowl until pale and fluffy. Beat the egg in a cup and add to the creamed butter mixture a little time, beating well after each addition. Now carefully fold-in the self-raising flour and the ground almonds (if using) then add the milk until you get a soft dropping consistency.

Spread the sponge mixture over the top of the apples and sprinkle the slivered almonds over the top. Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 40 minutes, or until the sponge is well risen and golden brown.

Serve the pudding straight from the oven and accompany with hot custard.
