Elubo (Yam Flour) is a traditional Nigerian recipe (from the Yoruba peoples) for a classic method of drying yams to make flour. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Yam Flour (Elubo).

1 white yam
Method:
Peel and slice the yam into pieces about 5mm thick. Wash well then place in a bowl and pour over enough boiling water to cover the yam. Set aside until the water is completely cold then drain the yam and dry in a cloth.
Scatter in a single layer on a tray then set in the sun to dry completely. Once the yam pieces are completely dry either pound in a mortar or grind in a coffee grinder until powdered. Sift through a fine-meshed sieve and store in an air-tight container.
