Ingredients:

2 tbsp butter
750g elderberries
150g sugar
1 tsp cornflour
juice of 1 lemon

Method:

Combine the butter, elderberries, sugar, cornflour and lemon juice in a small pan over medium-high heat. Bring to a gently boil then cook, stirring gently until the fruit begin to burst and release their juice. Allow to cook down until thickened (but don't cook until smooth).

Serve hot over pancakes, crêpes or blintzes.
