Here is another classic take on the traditional quickbread that resembles panettone in taste and texture (but which is made without yeast). If you want a quick and easy to make Christmas cake, this is the recipe for you.

Ingredients:

50g butter
150g sugar
275g plain flour
2 tsp baking powder
1 tsp salt
250ml eggnog
60g pecan nuts, chopped
60g raisins
2 tbsp mixed peel, chopped
60g maraschino cherries (a mix of red and green), chopped

Method:

Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.

In a separate bowl, sift together the flour, baking powder and salt. Stir this into the creamed mixture, mixing only until the dry ingredients are just moistened.

Fold in the pecan nuts, raisins, mixed peel and cherries then spoon the batter into a greased 500g (1 lb) loaf tin.

Transfer to the centre of an oven pre-heated to 170°C and bake for about 70 minutes, or until the top is browned and skewer inserted into the centre of the bread emerges cleanly.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack. Allow to cool completely before slicing and serving.
