Ingredients:
4 tbsp vegetable oil
½ tsp cumin seeds
2 large onions, finely chopped
8 garlic cloves, finely chopped
½ tsp ground turmeric
3 green chillies, finely chopped
2 tomatoes, finely chopped
Salt to taste
8 eggs, beaten
10g (¼oz) coriander leaves, chopped
Method:
Heat the oil in a saucepan or frying pan for 1 minute, add the cumin seeds and let them splutter for 15 seconds. Now add the onions and fry them over medium heat until translucent (about 5 minutes).
Add the garlic, turmeric, green chillies and tomatoes and stir-fry for 2 minutes. Finally add the beaten eggs and cook, stirring continuously, till the eggs are scrambled and cooked through.
Turn onto a warm serving dish, garnish with the coriander leaves and serve hot.
