Brown the sausages in a large non-stick pan. Drain away the excess fat then add the mushrooms and onions and fry for a further 5 minutes. Take off the heat and set aside to cool for 10 minutes. When the mixture has cooled stir-in the cheese and cubed bread then transfer the mixture to a greased 20cm square baking dish.
Whisk together the milk and eggs then pour over the sausage mix. Cover and chill in the refrigerator for at least 2 hours to allow the liquid time to penetrate the bread. After this time remove the covering and transfer to an oven pre-heated to 175°C. Bake, uncovered, for about 1 hour, or until set and golden brown. Allow to stand for 10 minutes then slice and serve.
