Here is another classic Durban Masala. In Indian cookery, the basic flavour is made from a blend of fried onions along with ginger and garlic paste. This masala means that you can fry your onions, then mix in the masala and you have the basic flavour components for most curries. As in all Durban curry recipes, this masala blend is based on the Durban Masala (see above).
Ingredients:
1 batch Durban masala (see above)
2 tbsp garlic flakes
1 tbsp ground ginger
Method:
Simply combine all the ingredients in a (or large coffee grinder) and process to a fine powder. Transfer to an air-tight jar and store in a cool, dark, cupboard.
This spice blend will be good for several weeks. I think this spice blend goes particularly well with lamb curries. We even add 1 tbsp of this to your lamb and beef stews as a base flavour note.
