This is a classic copycat recipe for a classic dry cake mix that replicates the flavour of a Duncan Hines Moist Melux Dark Chocolate Cake. The recipe calls for vegetable shortening as this will keep for several months in an air-tight tin. You can substitute butter but the resultant mix will only keep a few weeks in the refrigerator.
Ingredients:
280g plain flour
350g caster (superfine) sugar
105g dark cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
4 tbsp vegetable shortening (or butter)
Method:
Combine the flour, sugar, cocoa, baking powder, baking soda and salt in a bowl and stir thoroughly to combine. Add the shortening and use an electric mixer on medium sped to blend the fat into the dry ingredients. Continue mixing until the shortening (or butter) is completely mixed in and no chunks are visible.
Transfer to an air-tight container, where the mixture will keep for several months (if you are using butter then the mixture will only keep for a few weeks in the refrigerator).
