Dumboy is a traditional Liberian mash made from boiled cassava. It has a similar consistency to FuFu but is made from fresh, mashed cassava rather than fermented, dried, cassava.

Ingredients:

1.8kg cassava

Method:

Peel and wash the cassava, cut into chunks and boil in lightly-salted water for about 20 minutes. The cassava is done when a fork can just pierce it (do not allow it to become too soft). Drain off the water and mash the cassava as best you can with a fork.

Transfer to a mortar. Wet your pestle in water (keep doing this every now and then) and mash the cassava until your Dumboy is of the required consistency (typically it takes at least 25 minutes' pounding).
