Dulse Muffins is a modern British recipe for a classic savoury muffin of a flour, egg, milk and oil batter containing smoked herring and fresh dulse in the batter that are oven baked and served as a starter. Combine the flours, herring, dulse, shallot, dill and baking powder in a large bowl. Stir thoroughly with a fork to combine.
In a separate bowl, whisk together the eggs, milk and olive oil. Add the wet ingredients to the dry mix and stir to combine (but do not over mix). Divide the resultant batter between twenty small muffin of fairy cake moulds (silicone moulds are best). Transfer to an oven pre-heated to 200°C and bake for about 15 minutes, or until well risen, cooked through and golden brown.
Allow the muffins to cool briefly before removing from the moulds and serve cold as an aperitif, accompanied by a glass of well-chilled white wine.
