This is a classic drink from Northern Belize, where Eucheuma isoforme is the main cultivated seaweed. Eucheuma, commonly known as sea moss is a genus of seaweeds that are the main commercial source of carragheenan. Carrageenans or carrageenins are a family of natural linear sulphated polysaccharides that are extracted from red edible seaweed. The seaweed is used to prepare a sweetened milk drink flavoured with nutmeg, cinnamon and vanilla. Outside of the Caribbean and East Africa I would suggest using Irish Moss, Chondrus crispus a species of red alga that also yields carragheenan.
Combine the milk and seaweed in a saucepan, add the nutmeg and vinegar, place over medium heat and bring just to a boil. Take off the heat and set aside to cool.
Drain through a fine-meshed sieve, beat in the vanilla sugar then transfer to the refrigerator and chill for at least 60 minutes. Divide between two glasses and serve.
