Like sweet woodruff, clover the scent of clover blossoms intensify as they dry. This is because clover and sweet woodruff contain the same chemical ingredient, coumarin. This makes dried white clover excellent for flavouring delicate desserts such as Panna Cotta and Crème Brûlées.
Ingredients:
generous bunches of white clover flowers
Method:
Trim the stems from the blossoms, scatter on tea towels or newspaper and set in the sun to dry. Place out every day, or dry on a radiator until completely dry (between 8 and 10 hours of good sunshine). Ensure the flowers are completely dry before storing in an air-tight jar (this way there is no risk of them going mouldy).
In the past, these used to be sewn into posies to scent clothes and pillows.
