Draniki are classic Belarusian potato pancakes that are a staple of Belarusian cuisine and counted as the national dish.
Ingredients:
12 medium potatoes
2 tbsp flour (about)
1 egg
200ml sour milk (kefir)
salt, to taste
oil to fry
Method:
Peel the potatoes and grate into a bowl then add the flour and stir in the milk and egg. Season with salt then stir to combine.
Meanwhile, heat oil in a large frying pan and add the potato mixture by the tablespoon. Spread out with the back of a spoon to form small individual pancakes (no more than 10cm in diameter). Cook for about 4 minutes (or until nicely crisped and brown) then flip over and cook on the other side.
These should be served hot, accompanied by sour cream.
