Mambá (Spicy Peanut Butter) is a traditional Dominican (from the Dominican Republic) recipe for a classic version of peanut butter made with peanuts, peanut oil and scotch bonnet chilli. Ingredients:
150g unsalted toasted peanuts
1 tbsp peanut oil
1 Scotch bonnet chilli, (or habanero)
½ teaspoon salt
Method:
Combine the peanuts, oil, half the Scotch bonnet chilli and salt in a food processor. Grind until you get a smooth paste.
Taste and add more chilli until you find the point you like (not all hot chillies are the same, for this one I used a whole scotch bonnet because we like very spicy food). Note that the peanuts will also ameliorate the heat of the chilli and you might need to add more than you think.
When you reach the flavour/heat you like, pour into a lidded jar and keep refrigerated.
