Arepitas de Maiz (Cornmeal Fritters) is a traditional Dominican (from the Dominican Republic) recipe for a classic snack or accompaniment of a cornmeal, milk, egg and aniseed batter that's fried to cook. Ingredients:
140g cornmeal
150ml milk (whole or skim)
2 large eggs
¾ tsp salt
1 tsp aniseed
1½ tsp granulated sugar
250ml oil, for frying
Method:
In a bowl, mix together the cornmeal, milk, eggs, salt, aniseed, and sugar. Cover and set aside to soak in the refrigerator for an hour (this step is optional but highly recommended)
Place a frying pan over medium heat and use to heat up the oil. Add the cornmeal mix one tablespoon at a time, forming small, thick, pancakes.
Cook, turning frequently until golden brown on both sides.
