Dominica Saltfish Accra

Ingredients:

150g saltfish
250g flour
600ml water
15g onion chopped
5g parsley chopped
25g spring onions chopped
5g thyme leaves
2 tbsp hot chillies chopped (or to taste)
1 tbsp ground turmeric
1 tsp ground black pepper
salt, to taste
1 tbsp garlic powder
1 tbsp baking powder
2 tbsp lime/lemon juice
750ml oil (for frying)

Method:

To prepare the saltfish, wash under cold, running, water to remove any excess salt. Place in a large bowl, cover with plenty of water and set aside to soak over night. Change the water several times during this period.

The following day, bring a large pan of water to a boil. Drain the saltfish, add to the pan and boil for 20 minutes, until tender. Drain the fish, allow to cool then flake (remove any bones or skin). Set aside until needed.

Sift the flour in another bowl then beat in the water to form a smooth batter.

Add all other ingredients (including the flaked saltfish) and stir to blend. At this point stir in the baking powder.

Heat the frying oil in your wok or saucepan (or use a deep fryer if you have one).

Using a scoop, take some of the batter and drop into the hot oil to fry. When it turns golden brown, turn it over to cook the other side.

When golden brown and cooked on both sides, remove with a slotted spoon or spider and transfer to a plate covered with kitchen paper to drain the excess oil.

Enjoy with plain or accompanied by your favourite sauce. Hot sauce or Dominican Spicy Guacamole would be typical.
