Plantain Pie is a traditional Dominican (from the Island of Dominica) recipe for a classic accompaniment of a blend of plantains, mayonnaise, cheese, vegetables and herbs baked in a dish with a braedcrumb and cheese topping. Ingredients:
8 green Plantains
3 tbsp Mayonnaise
180g Cheese, grated
1 small tin evaporated Milk
1 large Onion, finely diced
1 Garlic clove, minced
2 tsp flat-leaf parsley, chopped
2 tsp Celery, chopped
50g dry breadcrumbs
Method:
Peel and wash plantains, then place in a pan of boiling water and cook for about 25 minutes, until very soft. Drain the plantains, chop and pound in a mortar until very smooth.
Mash cooked plantains in a mortar (or suitable container) until very smooth. Scrape into a bowl and mix in the onion, garlic, parsley and celery. In a separate bowl, mix together the mayonnaise, half the grated cheese and the evaporated milk. Mix this blend with the plantain mixture then scrape into a baking dish.
Mix together the breadcrumbs and the remaining grated cheese then scatter this over the pie as a topping.
Transfer to the centre of an oven pre-heated to 180C and bake for 20 minutes until heated through and the cheese topping is bubbling.
Allow to cool slightly then serve as an accompaniment.
