Plantainipannkoogid, or Plantain Pancakes, are a delicious and popular dish in Dominica Cuisine. Made with ripe plantains, these pancakes are a delightful combination of sweet and savory flavors.
Ingredients:
2 ripe plantains, peeled and mashed
2 eggs
45g plain (all-purpose) flour
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp ground cinnamon
2 tbsp brown sugar
1/2 tsp vanilla extract
2 tbsp milk
2 tbsp butter, for frying
Method:
Sift together the flour, baking powder, salt and ground cinnamon into a mixing bowl. Now mix in the mashed plantains, sugar, vanilla extract, and milk until you have a smooth batter.
Heat a non-stick frying pan, skillet or griddle over medium heat and add a small amount of butter to coat the surface.
Pour 4 tbsp (1/4 cup) of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Repeat with the remaining batter, adding more butter to the pan, as needed.
Serve the plantain pancakes warm with your favourite toppings (I like a fruit coulis).
