Though this is an authentic recipe from Dominica it's essentially the same recipe as Jamaican jerk seasoning as it, ultimately, originated in Jamaica.
Ingredients:
1 tbsp Garlic Powder
1 tbsp Onion Powder
1 tbsp Dark Brown Sugar
1 tsp Dried Thyme
1 tsp Smoked Paprika
1 tsp Dried Parsley Flakes
1 tsp Paprika
1 tsp Cayenne Pepper
1 tsp hot Chilli Flakes (I used scotch bonnet)
1 tsp Salt
1 tsp ground Black Pepper
1/2 tsp Ground Ginger
1/4 tsp Ground Cinnamon
1/4 tsp freshly-grated Nutmeg
1/8 tsp Ground Allspice
1/8 tsp Ground Cloves
Method:
Add all ingredients to a small mixing bowl and mix until evenly combined. Transfer to an empty spice jar or airtight container and store in your spice cabinet or a dark cool place.
