Coconetes (Dominican Rustic Coconut Biscuits) is a traditional Dominican (from the Island of Dominica) recipe for a classic rustic biscuit made from grated coconut blended with flour, sugar, butter, eggs and cinnamon. Also known as Conconetes or Masitas these are classic Dominican rustic coconut biscuits, enjoyed with tea or roselle juice.
Ingredients:
butter, for greasing the baking tray
½ tsp baking powder
½ tsp ground cinnamon
¼ tsp salt
200g pain (all-purpose) flour
200g brown sugar
100g salted butter at room-temperature
2 medium eggs
60g coarsely-grated coconut
Method:
Pre-heat your oven to 145ºC then grease a baking tray with butter and set aside.
Sift together the baking powder, cinnamon, salt and flour into a mixing bowl then set aside.
Cream together the butter and sugar until pale and creamy. Add the eggs, one at a time, beating thoroughly to combine after each addition. If the mixture looks like it might be splitting add a tablespoon of flour and beat to combine. Once both the eggs are incorporated fold in the coconut with a spatula, followed by the flour.
Taking two tablespoons at a time, make little mounds of the dough on the baking tray, leaving enough room to spread between them.
Transfer the baking tray to the centre of your pre-heated oven and bake for about 15 minutes, until nicely golden brown.
Allow to cool on the baking tray for 15 minutes then transfer to a wire rack to cool completely.
