Djindjan (Guinean Ginger Juice)
Djindjan (Guinean Ginger Juice) is a traditional Guinean recipe (from Guinea-Conakry) for a classic drink of water infused with ginger, orange and lime that's served slightly sweetened and well chilled. African ginger is not the large, white, Caribbean ginger that we are used to. The roots are tiny (more like turmeric in appearance) and very knobbly. There is no point peeling them, simply grate, infuse and then strain the ginger out, skin and all. However, if you include the skin you will get a darker ginger juice.
Ingredients:
200g fresh ginger root
2 oranges
1 lime
180g sugar
2l water
Method:
Wash the ginger well, to remove any sand and grit then grate the ginger root. Put in a large pan, cover with water then bring to a simmer. Take off the heat and turn into a bowl. Set aside to cool then transfer to the refrigerator and set aside to infuse over night.
The following day, strain the juice through a fine-meshed sieve. Turn the ginger pulp into a cloth and wring out as much of the juice as you can. Now strain the juice through a fine-meshed sieve lined with a double layer of muslin to remove any fine particles from the juice.
Juice the oranges and lime and mix the fruit juice with the ginger juice. Add the sugar and stir until completely dissolved. Now taste the drink. If the taste is too pungent, dilute with water, if too sour add more sugar.
There are many variants of this basic recipe. Some add vanilla, others orange blossom water and others add fresh mint.
I like mine well chilled and served over ice with a sprig of African blue basil.
Versions of this drink are often served as a cure-all for children, which is why you often have a love or hate reaction to this drink in many West African countries.
