Dirty fries are fries, chips (or, in this case, potato wedges) covered with American-style chili and cheese sauce. It's a really great way of using up leftover chili/chilli and making a brand new dish out of it. Though chili is typically made using beef and beans, other meats (such as turkey or pork) also work and you can make it vegetarian with just beans. So, the style of the final dish will depend on exactly what type of chili you start with.

Ingredients:

For the Potato Wedges:
4 red-skinned potatoes, scrubbed and sliced lengthwise into wedges
60ml olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp freshly-ground black pepper
sea salt, to taste
1/2 tsp cayenne pepper

For the American Cheese Sauce:
300ml whipping cream
350g mature cheddar, grated
225g chilli Monterey jack, grated
1/4 tsp sea salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp chilli powder

To Garnish:
Spring onion, sliced into rounds
Jalapeño chillies, sliced into rounds

1kg (or more) leftover chili

Method:

Pre-heat your oven to 220°C. Place the potato wedges in a large bowl and cover with water then set aside to soak for 15 minutes.

After this time, drain the potatoes, pat dry in a clean tea towel then toss with the olive oil, garlic powder, onion powder, paprika, salt, pepper, and cayenne pepper in a large bowl.

Line a baking tray with a greased baking tray then arrange the potatoes on top in a single, even, layer. Place in the centre of your oven and bake for about 15 minutes until golden brown and fork-tender.

In the meantime, place a medium, heavy-based saucepan over medium heat. Add the cream and cook until bubbles start to form around the sides. Reduce the heat to low, then stir in cheeses and seasonings and continue cooking, stirring, until the cheese is completely melted.

Either place the leftover chili in a saucepan or in a microwave safe bowl and heat until piping hot through.

To assemble the dish, spread some of the cheese sauce on a serving plate. Top with the potato wedges then drizzle over a little more cheese sauce. Top with the chili then add more cheese sauce.

Garnish with the spring onions and jalapeños and serve.
