Dinner Rolls

Note that the dough for these rolls is very sticky, they can be made by hand, beating with a wooden spoon, but it is far easier to prepare this recipe in a food mixer fitted with a dough hook.

Ingredients


600ml warm milk (blood heat)
4 tsp active, dried, yeast
100g sugar
100g butter, melted and cooled
2 tsp salt
2 eggs
850g plain flour
35g butter (about)

Method:

Pour the milk into a small bowl, sprinkle over the yeast then cover with a cloth and set aside in a warm place for 5 minutes to prove.

In the meantime, combine the sugar, melted butter, salt and eggs in the bowl of a food processor fitted with a dough hook. Beat until combined, then add the milk, followed by the flour and mix well. Beat at medium-low speed for 8 minutes, scraping down the sides of the bowl with a spatula, as needed.

Cover the bowl of the mixer with clingfilm (plastic wrap) and set aside to rise in a warm place for about 60 minutes, or until the dough has doubled in volume.

After this time, knock the dough back gently, then cover and set aside to rise again for 40 minutes.

Again knock the dough back then divide into 36 pieces (the dough is very sticky and this is easiest done with a spoon). Plop the dough pieces in a roasting tin, arranging them so that the edges are just barely touching.

Cover the tin with clingfilm (plastic wrap) and set aside to rise for about 40 minutes, or until the rolls have doubled in volume.

Melt the remaining butter and drizzle over the tops of the rolls to glaze. Transfer to an oven pre-heated to 200°C and bake for about 12 to 15 minutes, or until golden brown.

Allow to cool, but server warm.

These make an excellent base for Christmas morning bread.
