Dhania Chicken (Coriander Chicken)

This is essentially Indian barbecue chicken with a marinade made of coriander leaves with spices.

Ingredients:

1 bunch coriander leaves
1 whole chicken cut into serving-sized pieces
2/3 tsp coriander powder
1 tsp toasted cumin seeds, ground to a powder
2 tsp freshly-ground black pepper
1 to 2 tsp hot chilli powder (according to taste)
2 tbsp ginger-garlic paste
2 tbsp vinegar or lemon juice
1 tbsp oil
1 tsp turmeric powder
salt to taste
oil for frying

Method:

Place the coriander seeds in a blender and render to a paste (add a little water if needed). Scrape into a bowl and mix with all the other ingredients (except the chicken).

Add the chicken pieces to a bowl, pour over the coriander paste and mix well to coat the chicken. set aside in the refrigerator and marinate over night

The following day heat your barbecue and when hot add the chicken pieces. Turn frequently, brushing with any remaining marinade. Cook for about 20 minutes until the chicken is cooked through and slightly charred.

Serve hot.
