Devils on Horseback is a traditional British recipe for a classic starter of prunes coated in stilton wrapped in bacon that are baked in an oven. The full recipe is presented here and I hope you enjoy this classic British version of: Devils on Horseback.

Ingredients:
24 prunes, stoned
12 rashers streaky bacon
12 small slices of toast
50g mango chutney
90g stilton, crumbled (optional)
butter for the toast
1 small bunch watercress
Method:
Soak the prunes in boiling water or hot orange juice for at least 30 minutes. Stuff each prune with 1/2 tsp chutney. Stretch the bacon with the back of a knife then cut each rasher in half. Sprinkle a little of the crumbled stilton (if using) on each rasher, allowing 3mm at each end to be clear.
Place a prune in the centre of the bacon and wrap the bacon around it. Turn the devil so that the open ends of bacon lie at the bottom then secure with a cocktail stick.
Place each devil on a baking tray and put in the centre of an oven pre-heated to 200°C (400°F/Gas Mark 6) and bake for about 8 minutes.
Butter the toast, place 2 devils on each, garnish with watercress and serve.
