These are classic German 'good luck' buns, typically baked for New Year.

Deep Fried Coconut King Prawns: A British recipe for a snack or seafood dish of king prawns that are egged and coated in shredded coconut before being deep fried.

Ingredients:

90g plain flour
1 tsp sea salt
1/2 tsp ground ginger
1/4 tsp freshly-ground black pepper
generous pinch of cayenne pepper
3 egg whites
175g shredded coconut
675g king prawns, peeled and de-veined (keep the tails attached)
oil for deep frying

Method:

Heat oil in a deep fryer to 160°C.

In the meantime, mix together the flour, salt, ginger and black pepper in a bowl.

Add the egg whites to a clean and dry bowl and beat until foaming.

Coat the prawns with the flour mix then dip into the egg whites. Pat in the shredded coconut to coat.

Drop into the hot oil and fry, turning once, for about 150 seconds, or until golden brown.

Remove with a slotted spoon and drain on kitchen paper as you cook the next batch.

Serve hot.
