Date and Nut Laddu a Classic Anglo-Indian recipe for a treat of nuts, seeds and fruit bound with a data and sugar paste and shaped into balls before serving.

Ingredients:

18 pitted dates
5 tbsp chopped almonds
5 tbsp pistachio nuts, chopped
5 tbsp chopped cashew nuts
5 tbsp sunflower seeds
5 tbsp mixed fruit (currants, sultanas, glacé cherries, mixed peel), chopped
3 tsp ghee
2 tsp sugar (or to taste)

Method:

Ensure that the nuts are quite finely chopped. Take the dates and chop into small pieces.

Heat the ghee in a pan, add the nut pieces and toast gently until lightly browned. Add the fruit and dates and continue cooking, stirring constantly, until the dates begin to break down.

Scatter over the sugar and stir well to combine. Take off the heat and allow to cool, stirring all the while, until the mixture can be handled.

Whilst still warm shape the laddu into balls. Sit in small paper cases and serve.
