This is a very decadent version of the traditional meringue kisses that makes an excellent Valentine's day treat, especially with a glass of champagne.

Ingredients:

2 egg whites, at room temperature
1/4 tsp cream of tartar
pinch of salt
100g granulated sugar
1/2 tsp vanilla extract
120g dark chocolate (at least 70% cocoa solids), chopped

Method:

Add the egg whites to a medium bowl then beat with an electric mixer set to medium until frothy. Add the cream of tartar and salt then beat on high speed until the mixture is stiff. Now add the sugar 1 tbsp at a time, beating thoroughly to incorporated. Add the vanilla and beat to mix then fold in the chocolate chips.

Drop the batter by the heaped teaspoon onto a baking tray lined with parchment paper. Transfer to an oven pre-heated to 190°C then turn the oven off and allow the meringues to harden and cook as the oven cools (5 hours). When done, store in an air-tight jar.
