Curry comorien (Comoros Curry)

This is a classic recipe from the Comoros islands for prawns or chicken in a coconut milk base. The recipe presented here is for the prawn version, but notes are added so you can readily make this recipe with chicken.

Ingredients:

500g large prawns (or 500g chicken breasts, cubed)
300ml coconut milk
2 onions, peeled and sliced
6 spring onions, sliced
4 garlic cloves, grated
2 tsp curry powder (Swahili curry powder would be appropriate)
30g ghee (clarified butter)
1 tsp thyme
2 tbsp flat-leaf parsley, chopped, to garnish
Salt to taste

Method:

If using chicken, fry in butter or oil until browned then set aside.

Place a pan over medium heat, add the ghee and when foaming use to fry the onions until browned. Stir in the grated garlic, scatter over the curry powder and stir to combine.

Continue cooking over low heat, stirring occasionally, for 5 minutes. At this point pour in the coconut milk and add the chicken pieces (if using) along with the spring onions and thyme.

Bring to a gentle boil and cook for 20 minutes (at which point the chicken version is ready to serve).

If using prawns, add them to the curry sauce at this point and cook for 5 minutes, until just done.

Season to taste with salt, garnish with the chopped parsley and serve hot with rice.
