Curry and Cardamom Cookies is a traditional American recipe or a classic butter, sugar, egg and flour cookie (biscuit) leavened with baking powder and flavoured with nuts, curry powder and cardamom. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition. Now beat in the vanilla extract.
Sift together the flour, baking powder, curry powder and cardamom in a bowl. Add this to the creamed mixture, adding a third at a time. When blended, stir in the nuts. Divide the dough into four portions, form into rolls then wrap each in clingfilm (plastic wrap) and refrigerate for at least 4 hours.
Remove the rolls from the refrigerator and slice into 6mm thick pieces. Arrange these on an ungreased baking tray then transfer to an oven pre-heated to 170°C and bake for about 12 minutes, or until cooked through and golden brown.
Remove from the oven and allow to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
